I am baking pumpkin cookies this afternoon and thought I would share the recipe. It is my mom's recipe. They are a wonderful treat during these first months of the holidays. Great for Halloween and Thanksgiving!
Pumpkin Cookies
1 1/2 c. butter
2 c. brown sugar
1 c. sugar
1 t. vanilla
1 egg
4 c. flour
2 c. quaker oats
2 t. cinnamon
2 t. baking soda
1. salt
1 can pumpkin (15 oz.)
1 jar cream cheese icing
In a very large bowl, cream together butter, sugars, vanilla and egg. Add flour, oats, cinnamon, baking soda, salt and pumpkin; mix well. Fold in chocolate chips with spatula. Drop onto cookie sheet and flatten in the middle (for icing). Bake at 350 degrees for 16-20 minutes. Ice cookies when completely cool. Makes about 3-4 dozen depending on how big you like your cookies!
